The unforgettable outdoor food experience
The idea behind Sean In The Woods is something I had dreamed of doing for a very long time. As a child, I grew up next to a National Trust woodland and spent a lot of my free time scrambling about in the woods, foraging, and bringing home wild treats to enjoy with the family. After spending more than 7 years in London, training under some of the best Michelin-starred chefs, I still had a hankering for those carefree days, and truly believe that every one of us has that same desire to give in to that inner-child urge and return to those carefree times.
I trained at South Downs College and was inspired to excel in fine dining and to be Michelin star trained. I have realised a lot of this and had the good fortune to work for, amongst others, Marco Pierre White, Michel Roux Jr. at Parliament Square, and Gordon Ramsey at Royal Hospital Road, being taught by the very best in the business.
Now it is the time for the next step: Sean In The Woods has been designed for both the adventurous, and the not so adventurous. The idea is to give you the opportunity to leave the rat race behind for a couple of days and bask in the best that the British countryside has to offer. I want you to have time to relax, free your mind, and boost your creativity. To aid this, I will indulge you with the best food, cooked and prepared using traditional methods, inviting you to join me in as much or as little as you wish.
During my events, I will be showing you different methods of cooking using wood and charcoal fires. You have the opportunity to experience many different skilled, rarely used techniques, go on guided foraging walks, take part in discussions about preservation methods, and discuss picking, preparing, and cooking seasonal produce. My ultimate aim is for you to return to your day job refreshed and energised with a new zest for life.

Not my comfort zone at all but was intrigued and so I partook in Sean and the Woods itinerary and I must say I WILL BE BACK. So fun and everyone involved was polite and engaging!
Had such a fantastic autumnal mushroom forage with Sean, his knowledge and passion for the outdoors and all it it tails is second to none. I started the day with no knowledge on mushrooms and ended the day with knowing many different varities and most importantly what was and wasnt edible. I would high recommend a forage walk with Sean.
Awesome experience, starting with a fabulous eggs benedict breakfast on camp fire baked muffins (best i've ever tasted). Then a foraging trip, Seans knowledge in phenomenal, and back to cook what we had foraged. This wasn't any old camp fire meal, it was fine dining around a camp fire, the atmosphere was incredible. Will definitely be doing more of these, cant wait for the next event.
Sean's cooking style is generous, honest and soul-warming. He is a wonderful, genuine character that made our retreat a really unique experience. The man is a fountain of knowledge when it comes to food and traditional methods of cooking. There is something beautiful and refreshing about his attitude to food, which makes you appreciate the process and every bite without the whole experience being pompous. I had a splendid time hanging out with Sean, exchanging stories around the campfire and sharing his wonderful food.

I attended a food-focused retreat, called Campwell and Sean was our chef for the weekend. He was just brilliant! So passionate and knowledgeable. We foraged in the woodland for food which we then helped to prepare and cook. I loved seeing all the different outdoor cooking techniques, including an underground oven! Everyone came away inspired to practice some of what we learned. Look forward to more tasty food in the future
